Lina Gautam – Sag Chicken with Tomato Rice
(Serves 2)
TOMATO RICE:
Ingredients:
1 cup basmati rice wahed
1tbsp veg oil
1tsp onion seeds
1 garlic cloves finely chopped
½ red onion finely chopped
2-3 salad tomato finely chopped
½tsp salt or to your taste
1tsp butter
Handful of chopped fresh coriander and mint mix
Method:
Heat oil, fry onion seeds and add onion, garlic and cook for a min or so then add tomato salt, cook until tomato get soft.
Add rice with 1 and ½ cup of water
Cover and cook for about 4-6 min in a medium to low heat with cover on.
Garnish with mint coriander mix and serve hot.
SAG CHICKEN:
Ingredients:
1 large chicken fillets cut into strips
150 g frozen spinach, defrosted
3tbsp vegetable oil
½tsp ajwano seed or thyme leaves
½tsp turmeric powder chopped
Salt to your taste
1 fresh chilli
2 garlic cloves crushed or grated
1tsp grated ginger
1 salad tomato chopped
½tsp of cumin powder and ½tsp coriander powder
Method:
Heat the oil in a pan
Fry ajwano or thyme
Add chicken with turmeric, salt, cover and cook until chicken is cooked
Add chilli, garlic, ginger, tomato, cumin and coriander powder, stir and cook until tomato get soft
Add spinach and cook for about minute or so.
Serve with tomato rice
