A Beloved Tibetan Delight and North-Indian Street Food

Ingredients: (Makes about 20 momos)
For the Dough:
· 2 cups all-purpose flour
· ½ teaspoon salt
· Water, as needed
For the Filling:
· 250g (9 oz) ground chicken
· 1 small onion, finely chopped
· 2 tablespoons spring onions, finely chopped (greens only)
· 1 tablespoon garlic, finely minced
· 1 tablespoon ginger, finely minced
· 1 green chili, finely chopped (optional)
· 1 teaspoon soy sauce
· 1 teaspoon sesame oil
· ½ teaspoon ground black pepper
· Salt to taste
For the Dipping Sauce (Optional):
· 2 medium tomatoes, chopped
· 1-2 dried red chilies (adjust to taste)
· 1 teaspoon garlic, minced
· 1 tablespoon sesame seeds
· 1 teaspoon soy sauce
· 1 teaspoon sugar
· Salt to taste

Instructions:
Step 1: Prepare the Dough
1. In a large bowl, combine the flour and salt.
2. Gradually add water, mixing until it forms a soft, pliable dough.
3. Knead for 8-10 minutes, cover with a damp cloth, and let it rest for 30 minutes.
Step 2: Prepare the Filling
1. In a mixing bowl, combine ground chicken, onion, spring onions, garlic, ginger, green chili, soy sauce, sesame oil, black pepper, and salt.
2. Mix well until everything is combined. Set aside.
Step 3: Prepare the Wrappers
1. Divide the dough into small equal portions and roll each into a ball.
2. On a lightly floured surface, roll each ball into a thin circle about 3 inches in diameter.
Step 4: Assemble the Momos
1. Place a small spoonful of filling in the centre of each wrapper.
2. Fold the wrapper into a pleated half-moon or round shape, pinching the edges to seal tightly.
Step 5: Steam the Momos
1. Grease a steamer basket lightly to prevent sticking.
2. Arrange the momos in the basket, leaving some space between them.
3. Steam for 12-15 minutes, or until the wrappers are translucent, and the filling is fully cooked.
Step 6: Prepare the Dipping Sauce (Optional)
1. Heat a small pan and lightly toast the sesame seeds.
2. Blend the tomatoes, red chilies, garlic, sesame seeds, soy sauce, sugar, and salt into a smooth paste. Adjust seasoning as needed.
Step 7: Serve Serve the hot chicken momos with the dipping sauce on the side. Enjoy!
Tips:
· You can add finely grated cabbage or carrots to the filling for extra texture.
· If you don’t have a steamer, use a large pot with a lid and place the momos on a heatproof plate over boiling water.
