Steamed Garlic Prawns with Enoki Mushrooms

Steamed Garlic Prawns with Enoki Mushrooms 

Ingredients: 

 
1). 40g enoki mushrooms 
2). 50g bean thread noodles 
3). 20 medium peeled and deveined raw prawns 
4). 4 cloves of garlic, finely chopped 
5). 1 medium red chilli, finely chopped 
6). 1 banana shallot, finely chopped 
7). 2 scallions, finely chopped 
8). 1/2 egg white 
9). 1/2 tsp soy sauce 
10). 1/2 tsp seasoned black vinegar 
11). 50ml vegetable oil 
12). Drizzle of sesame oil 
13). Pinch salt 
Pinch white pepper 
Pinch sugar 
 
Instructions: 
 
1). On a plate with a small edge, arrange strands of your enoki mushrooms to cover the plate. 
2). Rehydrate your bean thread noodles in some hot water and when slightly soft, add them on top of the enoki mushrooms.  
3). Season the bean thread noodles and enoki mushrooms with 1/2 tsp of soy sauce, a pinch of white pepper, a drizzle of sesame oil, 1/2t sp of seasoned black vinegar, a pinch of salt, and sugar. 
4). Butterfly your prawns and mix with 1/2 egg white, a pinch of white pepper, salt and sugar. Now arrange the prawns on top of the bean thread noodles in one layer.  
5). Mix the chopped garlic and chilli together and sprinkle it over the prawns. Steam on high heat for 8 mins.  
6). While the prawns are steaming, in another pot, heat the oil for 2 minutes, then add the white part of the chopped scallion in along with the shallot. Stir-fry for 2 minutes. Pour the hot oil over the garlic prawns. Sprinkle them with some scallion, and they're ready to serve.
