Ingredients:
Butter
Olive Oil
Celery
Onion
Dries Oregano
Smoked Paprika
Tin of Tomatoes
Tin of Chickpeas
300ml Chicken or Vegetable Stock
Optional garnish: Fresh Parsley & a drizzle of Cream
Method:
Place the oil and butter in a large saucepan.
Add the onions and celery and add a pinch of salt.
Sweat for about 5 minutes.
Add the smoked paprika and oregano and cook out for a moment.
Add the tomatoes, stock and chickpeas and bring to a boil.
Blitz and check for seasoning.
Garnish a drizzle of the cream and the parsley.
