Pho (Vietnamese Noodle Soup)

Pho (Vietnamese Noodle Soup)
Ingredients:
 
? Water: 8 cups
? Spanish onions: 1.4 cups
? Carrots: 1 cup
? Celery: 1 cup
? Red chili: 1-2 tablespoons
? Ginger: 2 teaspoons
? Garlic: 2 teaspoons
? Lemongrass: 1 tablespoon
? Coriander leaves: 1/3 cup
? Lime leaves: a pinch
? Cardamom pods: 2-3 pods
? Dried combo: 1 tablespoon
? Dried shiitake: 1-2 pieces
? Miso paste: 3 tablespoons
? Soy sauce: 2 teaspoons
? Salt: 1 tablespoon
 
 
Pho Broth Instructions:
 
1. Prepare Vegetables:
    Peel and roughly chop 1.4 cups of Spanish onions, 1 cup of carrots, and 1
    cup of celery.
    Mince or grate 2 teaspoons of ginger and 2 teaspoons of garlic.
 
2. Sauté Aromatics:
     In a large pot, heat a small amount of oil over medium heat.
     Add the onions, carrots, celery, and sauté for 3-5 minutes until softened.
     Add the ginger, garlic, 1-2 tablespoons of red chili (adjust for your spice
     level), and 1 tablespoon of salt.
     1 tablespoon of lemongrass, and the pinch of lime leaves. Stir for another
     1-2 minutes until fragrant.
 
3. Add Broth Ingredients:
     Pour in 8 cups of water.
     Add 2-3 cardamom pods, 1 tablespoon of dried combo, and 1-2 dried shiitake mushrooms.
     Stir in 3 tablespoons of miso paste and 2 teaspoons of soy sauce
 
4. Simmer:
     Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40
     minutes.
     Occasionally stir and check to ensure the flavors are blending well.
 
5. Strain the Broth:
     After simmering, strain the broth to remove the vegetables and spices,
     leaving only the flavorful liquid.
 
6. Finish with Fresh Herbs:
     Stir in 1/3 cup of fresh coriander leaves for a burst of flavor.
 
7. Adjust Seasoning:
     Taste the broth and adjust seasoning if needed. Add more soy sauce or salt as desired.
 
8. Serve:
     Your pho broth is now ready to be served with noodles, meat, or
     vegetables of your choice. Garnish with additional coriander, fresh lime, or
     bean sprouts as desired.
