Mongolian Beef

Mongolian Beef
Ingredients:
 
500 gm sirloin steak, thinly sliced
1 soaked & sliced dried chili
3 tbsp cornflour 
1 tbsp sesame oil
1 cup vegetable oil
1 cup shaoshing wine
4 cloves garlic, minced
1 thumb size  ginger, minced
1 cup soy sauce
1 cup cup water
2 tbsp dark brown sugar
oil for frying
sliced spring onion 
50 gm Broccoli 
50 gm Mange tout
 
Method:
 
  • Place the beef into the mixing bowl and add in cornflour, mix until the beef is well coated.
  • Heat vegetable oil in a large pan. Add in garlic, chili and ginger and cook for 1-2 minutes. At this point add the  sesame oil. After approx 1 minute add in the shaoshing wine. Cook for a couple of minutes. 
  • Stir in soy sauce, water and brown sugar. Bring to a simmer and cook for 2-3 minutes. Set aside.
  • Meanwhile add enough oil to a  wok or pan to fry the beef.
  • Add in the beef, not overcrowding  the pan. Brown the beef on both sides for 1-2 minutes..
  • Remove from the oil and  place the beef in the sauce already prepared. Add in the mixed greens.
  • Bring the sauce and beef back to a simmer and cook until thickened , approx 2-3 minutes.
  • Serve immediately with jasmine rice and spring onions for garnish.
