Vegan & Gluten-Free, Perfect for Valentine's Day!
These delightful little bites are sweet, tart, and indulgent—a perfect treat for sharing with someone special on Valentine's Day! The combination of fresh raspberries, shredded coconut, and rich dark chocolate will melt your heart (and your taste buds)! ????
Ingredients (Makes about 8 servings)
For the Bites:
???? 1 cup frozen raspberries (125 g)
???? ¾ cup shredded coconut (180 ml)
???? 1-2 tablespoons maple syrup (or honey if not vegan or IBS-friendly)
For the Topping:
???? 100 g / 3.5 oz. 80% dark chocolate
???? Optional: 1 teaspoon coconut oil (for extra smoothness)

Instructions
???? Step 1: Place the raspberries, shredded coconut, and maple syrup into a blender or food processor. Blend until the mixture comes together. It will be sticky, but that’s perfect for rolling into balls.
???? Step 2: Roll the mixture into bite-sized balls. Work quickly, as the raspberries may start to melt!
???? Step 3: Place the balls onto a plate lined with parchment paper and freeze them for about 30 minutes to firm up.
???? Step 4: While the bites are freezing, melt the dark chocolate in the microwave. Stir in 1 teaspoon of coconut oil if you'd like the chocolate to have a smoother finish.
???? Step 5: Once the bites are firm, dip them into the melted chocolate or drizzle it over the top. Let them cool and set for a couple of minutes.
