Romantic Creamy Coconut Salmon Curry

Give your Valentine’s dinner a luxurious and romantic twist with this Creamy Coconut Salmon Curry. The rich, fragrant coconut sauce, infused with warm spices and citrusy notes, pairs beautifully with tender salmon—creating the perfect dish to impress your loved one. Serve it with fluffy basmati rice, naan, and a glass of white wine for an unforgettable date-night experience!

 

Ingredients (Serves 2 – The Perfect Date Night Dish! ????)

To Marinate the Salmon:

???? 2 fresh salmon fillets

???? ¼ tsp ground turmeric

???? Pinch of salt

???? Juice of ½ lemon

For the Aromatic Paste:

???? 2 tbsp fresh coconut (or desiccated coconut)

???? 1 tsp ground turmeric

???? Thumb-size piece fresh root ginger, peeled and finely chopped

???? 3 cloves garlic, peeled and finely chopped

???? 1 tsp garam masala

???? 1 tsp coriander powder

???? Juice of 1 fresh lime or lemon

???? 1-2 bird’s-eye chilies (adjust for spice level)

???? Handful of fresh coriander

For the Curry Sauce:

???? 2 tbsp coconut oil or olive oil

???? 1 medium red onion, finely chopped

???? 1 tsp garam masala

???? 1 tsp cumin powder

???? ½ tsp turmeric powder

???? 1 tin coconut milk (or coconut cream for extra richness)

???? ½ tin chopped tomatoes

???? Salt & freshly ground black pepper (to taste)

???? Fresh coriander & lemon wedges for garnish

???? Freshly cooked basmati rice or naan, to serve

Method

???? Step 1: Marinate the Salmon

· Place the salmon fillets on a plate and sprinkle with turmeric, salt, and lemon juice.

· Mix gently and set aside to absorb the flavours while you prepare the curry.

???? Step 2: Blend the Paste

· In a blender, combine coconut, turmeric, ginger, garlic, garam masala, coriander powder, lime juice, chilies, and fresh coriander.

· Add 2 tbsp oil and blend into a smooth, fragrant paste.

???? Step 3: Cook the Curry Sauce

· Heat coconut oil in a large saucepan over medium heat.

· Sauté chopped onions and coriander stalks for about 8 minutes until softened and golden.

· Stir in the blended paste along with turmeric, garam masala, and cumin powder.

· Fry for 3-4 minutes until aromatic.

???? Step 4: Add the Creamy Coconut Base

· Pour in coconut milk and chopped tomatoes, stirring well.

· Simmer for 5 minutes until the sauce thickens. Season with salt and pepper to taste.

???? Step 5: Cook the Salmon

· Gently place the marinated salmon fillets into the sauce.

· Stir lightly, cover with a lid, and let it simmer on low heat for 4 minutes.

· Remove the lid and simmer for another 10 minutes until the salmon is fully cooked.

???? Step 6: Serve with Love

· Garnish with fresh coriander leaves and a wedge of lemon.

· Serve with steamed basmati rice, naan, or chapattis.

· For extra romance, sprinkle with pomegranate seeds or rose petals for a visually stunning finish!
