Sticky Seville Orange Chicken

Sticky Seville Orange Chicken
Serves 4
 
Ingredients:
•     1 small chicken, jointed
•     1 small butternut squash, cut into wedges (skin on)
•     65g diced chorizo
•     8 shallots, halved
•     2 tablespoons red wine vinegar or sherry vinegar
•     1 teaspoon thyme
•     100 ml white wine
•     Olive oil
•     4 tablespoons Seville orange marmalade
•     1 teaspoon Dijon mustard
•     Juice of 1 orange
•     Fresh parsley or thyme, for garnish
 
Method:
1.    Preheat your oven to 180°C.
2.    Place the chicken pieces and butternut squash wedges in a shallow casserole dish.
3.    Scatter over the diced chorizo and halved shallots.
4.    Drizzle with red wine vinegar, sprinkle with thyme, and pour over the white wine.
5.    Season generously and drizzle with olive oil. Roast for 20-25 minutes until the chicken starts to brown.
6.    Mix the marmalade with Dijon mustard and brush over the chicken.
7.    Return to the oven for another 20 minutes until sticky and golden.
8.    Squeeze over the juice of one orange and garnish with fresh parsley or thyme.
 
Enjoy your Sticky Seville Orange Chicken with rice, crusty bread, or roast potatoes!
