Red Thai Curry Air Fryer Chicken Rice Noodle Soup

INGREDIENTS Serves 2
• 2 pints chicken stock (stock cube if preferred) 2€
• Chicken BONELESS thighs 4€
• 2 tablespoons red curry paste 1€
• 1 red chilies, sliced €1
• 3 slices ginger€1
• 200g RICE noodles €3
spinach, Bunch of coriander
• 1 lime €1
INSTRUCTIONS

In a pot, bring chicken stock to boil. Then add the red Curry paste and stir to make your stock.

Marinate chicken with red curry paste and air fry for 7-8 mins on max until fully cooked.

add in the rice noodles to the stock and cook for 4 mins until noodles are separated and cooked, transfer to a bowl

Slice chicken, add the spinach in the last 2 mins, dish out and serve hot with fresh coriander on top with the sliced chicken and a wedge of lime
