Spiced Pan Roast Monkfish Cheeks ,Braised lentil Salad ,Sriracha Mayonnaise

Ingredients:
6 Monkfish Cheeks
Spice Mix, Paprika, chilli, cumin
100g Lentils blanched
70g Diced Onion ,Carrot, Celery, leek
40g Polenta & Plain Flour Mixed
2 Heads Baby Gem, Washed
Olive Oil
Balsamic
50g Sriracha Mayonnaise
20g Butter
1 Lemon
Method:
Heat a non Stick Pan, Dredge the Monk Cheeks in The Flour , Polentaand spice mix and shake off any excess.
When the pan is Hot add some oil and a Knob of Butter. Fry the Fish , Browning on each side. This will take 4 minutes. Take the pan off and squeeze lemon juice on top.
While the fish is cooking, Cook the vegetable mix in a pot with oil. Should be a little Crunchy. Add the Lentils and take off the heat,
In a bowl add the lentil Mix to the baby gem Heads. Then dress with the Olive Oil and Balsamic.
Spoon some Sriracha Mayo on each plate and add the Monk Cheeks.
