Garlic Parmesan Chicken with creamy mashed potato and citrus Tenderstem

Ingredients
- 2 chicken breasts (about 300g each)
- 2 cloves of garlic, minced
- 50g grated Parmesan cheese
-50ml white wine
-100ml cream
-200ml chicken broth
- 1 teaspoon mixed herbs
- Salt and pepper to taste
-1 tbsp butter
-1 tsp cornflour
-1 lemon
- 2 tablespoons olive oil
For Mashed Potatoes:
- 500g potatoes, peeled and cut into chunks
- 50g butter
- 60ml milk
- Salt and pepper to taste
Method
- Season 2 chicken breasts with salt, pepper & some mixed herbs.
- On a frying pan, Cook chicken in 2 tbsp olive oil until golden brown. Remove chicken and set aside.
- Sauté 2 minced garlic cloves & 1 white diced onion in 1 tbsp butter. Add 50ml white wine, 200ml chicken broth, and 100ml cream.
- Mix in 1 tsp mixed herbs, Parmesan cheese and simmer. Thicken sauce with 1 tsp cornflour.
- Finish with lemon juice, salt, and pepper. Add the chicken back to the pan to coat with the sauce
- Boil 500g potatoes until tender. Mash with 50g butter and 60ml milk.
- Season mashed potatoes with salt and pepper. Serve the chicken on top with the creamy sauce & a side of Tenderstem broccoli
