Garlic Parmesan Chicken with creamy mashed potato and citrus Tenderstem
Ingredients
 
- 2 chicken breasts (about 300g each)
- 2 cloves of garlic, minced
- 50g grated Parmesan cheese
-50ml white wine 
-100ml cream 
-200ml chicken broth 
- 1 teaspoon mixed herbs 
- Salt and pepper to taste
-1 tbsp butter 
-1 tsp cornflour 
-1 lemon
- 2 tablespoons olive oil
For Mashed Potatoes:
- 500g potatoes, peeled and cut into chunks
- 50g butter
- 60ml milk
- Salt and pepper to taste
 
Method
  1. Season 2 chicken breasts with salt, pepper & some mixed herbs.
  2. On a frying pan, Cook chicken in 2 tbsp olive oil until golden brown. Remove chicken and set aside.
  3. Sauté 2 minced garlic cloves & 1 white diced onion in 1 tbsp butter. Add 50ml white wine, 200ml chicken broth, and 100ml cream.
  4. Mix in 1 tsp mixed herbs, Parmesan cheese and simmer. Thicken sauce with 1 tsp cornflour.
  5. Finish with lemon juice, salt, and pepper. Add the chicken back to the pan to coat with the sauce
  6. Boil 500g potatoes until tender. Mash with 50g butter and 60ml milk.
  7. Season mashed potatoes with salt and pepper. Serve the chicken on top with the creamy sauce & a side of Tenderstem broccoli
