Ingredients
2 medium chicken fillets
50g cornflakes
2 eggs
2 tbsp plain flour
1/2 tsp garlic granules
1/2 tsp smoked paprika
1/2 tsp chilli powder
2 pinches sea salt
Black pepper
2 brioche buns
For the hot honey
2 tbsps honey
1 tbsp of siracha
1 tbsp of soya sauce
1/2 tsp chilli flakes
For the toppings
Rocket leaves
Lemon zest and juice for dressing the salad
4 tbsps of mayo
1 tbsp of hot sauce
American style cheese
Crispy streaky bacon
Method
Preheat the oven to 180oC or you can make this in your air fryer.
Make the crumb by blending all the ingredients together.
Coat the chicken in the flour, egg and then into the for flakes batter.
Cook the chicken for 15mins in the air fryer or for 20-25mins in the oven.
Make the hot honey by adding all into a saucepan and bringing to a slow simmer. If it’s too thick add some water.
Once the chicken is cooked coat it in the hot honey.
For the mayo mix it with the hot sauce.
And no assemble all together in a nice brioche bun with the bacon and rocket.
