Puff Pastry Perfect Pinwheels
Erica Drum is getting us in the festive mood this evening with some Puff Pastry Perfect Pinwheels, with Mulled Wine!????
If you want to cook along at home, here's what you'll need!
 
Ingredients
For the pastry:
- 1 packet of easy roll puff pastry (of course you can make this yourself)
- 2tbls wholegrain mustard
- 2 tbls cream cheese
- 100g salami, sliced
- 100g Mild hard cheese, grated
- Fresh or dried sage
- A drizzle of olive oil
- Balsamic reduction
For the mulled wine:
- 100g Brown sugar or honey
- 2 oranges
- 1 tbs cloves
- 2-4 star anise
- 2-4 cinnamon sticks
- 1 bottle of red wine of choice
- 1 shot brandy/triple sec/cointreau
- Nutmeg, grated for garnish
 
Method:
Layout your pastry into a flat rectangle. Keeping it on the paper, start to spread the cream cheese all over it and then the mustard.
Next layer on the salami and then the grated cheese.
Sprinkle over some dried or freshly chopped sage and drizzle with olive oil. This will help it stick as you roll.
Roll the rectangle inwards from the longest side. Try to roll this as tight as you can.
Once you get a long tube, wrap it up again in some more paper as tight as possible and put in the fridge for at least an hour.
Pre-heat the oven to 180C.
Remove the tube from the fridge, it should be fairly solid now.
Remove all wrapping, it would be great to re-use the baking paper to line a flat tray.
Start to slice, about ½ inch thick, from one side, I find using a bread knife works best.
Place your pinwheels on your lined baking tray. Bake in your oven for 8-10 minutes.
Remove from the oven, carefully plate them and drizzle a little balsamic over them. They can be eaten hot or cold.
The tube can be frozen for up to a month, you will need at least 4 hours to thaw it out before cutting cooking.
For the mulled wine, place the sugar and juice of one orange in a saucepot and gently bring to a bubble.
While that is warming up, slice up your other orange and stud it with cloves.
Add in the oranges, start anise, cinnamon sticks and a little red wine. Allow this to bubble until all the sugar has dissolved.
Pour in the remaining wine, allow it to get hot but not boiling and lower the heat.
Add your liquor of choice here.
Serve hot in a mug or glass with nutmeg sprinkled on top.
