· 1 Ham 5kg in weight
· 3 tablespoons honey
· 200g brown sugar
· 20 cloves
· 2 tablespoons English mustard
· 1 onion – peeled and cut in half
· 4 bay leaves
· 2 carrots chopped
· 2 sticks celery chopped
· 1 teaspoons black peppercorns
· Soak the ham in cold water overnight. Place in a pot and cover with fresh water, add the onion, bay leaf, carrots, celery and peppercorns.
· Bring to the boil and reduce to a simmer, making sure the ham is always covered with water. Allow 30 minutes per kilo.
· Leave to cool in the water. Remove and place on roasting tray. Trim back the fat about 1 cm and cut criss-cross insertions into the fat.
· Mix the honey and mustard, insert cloves into ham and brush with the mustard and honey mixture. Sprinkle over the brown sugar.
· Place in oven at 180 °C for about 30 minutes, basting every 10 minutes until you have a golden glazed ham. Leave to cool.
