Chef Kevin Dundon showed us how to make frozen berries, with white chocolate sauce!
Ingredients
· 50g plain flour
· 50g wholemeal flour
· ½ tsp baking powder
· 50g brown sugar
· 75g mixed nuts, finely chopped
· 50g oatmeal
· 50g butter, cut into cubes
· 1 tbsp orange marmalade
· 400g frozen mixed berries
· 120ml cream
· 100g white chocolate, broken into pieces
· 2 shot of liquor ( i.e. ColeSwane , Bailey’s) optional
· 1 tsp honey
· 1 tbsp butter, at room temperature
Method
· Preheat the oven to 180C. In a bowl, combine the plain and whole meal flour, baking powder, brown sugar, nuts, porridge, butter and orange marmalade into a breadcrumb texture.
· Place on a non-stick baking tray and bake in the oven, stirring every 5 minutes for 10-15 minutes until golden brown and cooked through.
· Remove from the heat and set aside to cool.
· Fill half the glasses or ramekin with frozen berries and place in the fridge to slightly defrost.
· In the meantime, bring the cream to the boil. Once boiled remove from the heat and whisk in the white chocolate, liquor ( optional) & honey and when combined smooth the sauce with the butter.
· Remove the glasses from the fridge and slowly pour the chocolate sauce over the berries.
· When the berries are covered top up with a few more berries and sprinkle with some crunchy crumble topping.
· Serve immediately with extra warm chocolate sauce.
