Ingredients:
1). 1 Ball Fresh Burrata Cheese
2). 1 Tbsp Sunflower seeds
3). 2 Tbsp Honey
4). 2 Figs Sliced
5). 1 Tbsp Olive Oi
6). 1/2 Tsp Cajun Spice
7). 60 g Rocket Leaves
8). 1 Tbsp Balsamic vinegar glaze
9). 1 Sweet Potato Sliced
10). Freshly Ground Black pepper
Method:
1). Cut the Sweet Potato lengthways into 1/4-inch-thick slices.
2). Sprinkle with oil, spice and some freshly ground black pepper.
3). Pop into air fryer and cook on 180 c heat for 8-10 minutes until fully cooked / You can alternatively use oven at same temperature but cook for 20-25 minutes until fully cooked flipping over once halfway through.
4). Once the Sweet potato is cooked place it on the serving dish.
5). Top with Rocket leaves, fresh Burrata cheese, sliced figs, hot honey and sunflower seeds.
6). Drizzle some Balsamic glaze over the Bruschetta and add some freshly ground black pepper.
