Ingredients:
400g shredded potatoes (peeled and rinsed)
150g diced ham
60g shredded cheese (cheddar or your choice)
2 eggs, beaten
30g all-purpose flour (about 2 tablespoons)
2 green onions, finely chopped (optional)
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder (optional)
60ml oil for frying (approx. 4 tablespoons)
Method:
1. Prepare the Potatoes, then squeeze out excess water from the shredded potatoes using a clean kitchen towel or paper towels. This helps the fritters crisp up nicely.
2. In a large bowl, combine the shredded potatoes, diced ham, shredded cheese, eggs, flour, green onions, salt, pepper, and garlic powder. Mix until evenly combined.
3. Form the Fritters by scooped a small handful of the mixture (about 60g) and shaping them into patties, approximately 6-8 cm wide. Repeat with the rest of the mixture.
4. Heat the oil in a large skillet over medium heat. Once hot, carefully add the fritters. Cook for 3-4 minutes per side, or until golden brown and crispy.
5. Drain and Serve
6. Remove the fritters and place them on a plate lined with paper towels to drain excess oil. Serve warm with sour cream, ketchup, or your favorite dipping sauce.
