Longevity noodles are also known as yee mein. They are a symbol of a long life, wealth and good fortune and are eating during Chinese New Year and other celebrations.
Approx. 200g dry egg noodle nests (rehydrated in cold water and dried well-no water dripping off them)
4 spring onions – whites and green parts separated – cut into 2 inch pieces and the white parts then in half lengthways
Veg oil
2 tbsp light soy sauce
2 tbsp oyster sauce
1 tsp sesame oil
Pinch white pepper
Pinch fine sea salt
Pinch of sugar
Method:
In a hot wok (large frying pan), add 2 tbsp of veg oil into the pan and add the finely sliced shiitake mushrooms/large flat mushrooms and white parts of spring onions and quickly move them about with a wooden spoon so they don’t burn but stir fry.
Add the noodles into the pan and add another drizzle of oil and pat down with the wooden spoon and keep frying them to dry off the noodles more through the heat of the wok.
Then add the soy sauce, oyster sauce and splash of water now combine well.
Pinch of salt and sugar and a large pinch of pepper. Then around the edge drizzle the sesame oil. Now taste and adjust for seasoning. Add the rest of the green spring onion pieces and it is ready to serve.
