This is a really easy dish to prepare and one which will certainly satisfy all the family on a summers evening. It would also serve very well as the main course option at a casual and informal dinner party

2 tablespoons rapeseed oil

With a sharp knife, make a few slits in each chicken thigh. Mix the spices, garlic and oil together in a bowl. Add the chicken thighs, gently massaging the marinade into the chicken. Leave to marinade for at least 30 minutes but up to 2 hours if time allows.
