Ingredients:
175g/6oz Self Raising Flour
125g/4oz Sugar
125g/4oz Butter
2 Eggs
2 tablespoons Cold Water (or juice)
Pinch of Salt
Topping:
25g/1oz Butter
25g/1oz Brown Sugar
Tin of Pinapple Rings (drained) keeping back some juice
Glaced Cherries (to decorate)
Method:
1. Preheat oven to 190°C/375°F/Gas 5.Grease a 2 pint casserole dish with the 25g/ 1oz of Butter
2. Sprinkle sugar over the base.
3. Arrange pineapple rings on top. Place a cherry into centre of each ring.
To make sponge:
1. Using all-in-one method, put the flour, sugar, margarine, eggs, water or juice and salt into a mixing bowl.
2. Beat well until mixture is creamy and smooth. Pour into the prepared dish.
3. Bake for 25-30 minutes approx.
4. Turn out onto serving dish and serve with custard, crème fraiche or ice cream!
