Burnt Basque Cheesecake

Ingredients
- 600g Philadelphia cream cheese
- 210g Caster sugar
- 4 eggs
- 300g Double cream
- 1 tsp Vanilla bean paste/extract
- 1.5 tsp salt
- 20g Plain flour (sieved)
*Bring all ingredients at room temperature*
Method
- Preheat oven at 210 degrees Celsius and line a 24 cm or 9.5-inch spring form cake tin with two layers of parchment paper.
- In a big bowl, whisk Philadelphia cream cheese and sugar together until smooth.
- Add eggs one by one and whisk, making sure that each egg is fully incorporated before adding the next.
- Mix in the cream, vanilla paste/extract and salt.
- Using a fine sieve, add plain flour and whisk all together until smooth.
- Place the mixture into the cake tin and tap down a few times to remove as much air as possible.
- Bake at 210 degrees Celsius for 30mins. The top should be deep brown in colour and the cake should have a nice wiggle when it comes?out (like jello).
- Cool down gradually in the tin at room temperature. After an hour, move to the fridge to cool completely.
- Once completely chilled (preferably overnight), slice and enjoy.
