Red Berry Chocolate Mousse

Norma Kelly's Red Berry Chocolate Mousse
INGREDIENTS:
For The Mousse:
125g milk
15g honey
160g dark chocolate
200g cream whipped
For The Salad:
8 strawberries, cut in quarters
8 raspberries, cut in half
1 sprig of mint, chopped
1/2tsp icing sugar
Splash of pink gin (optional)
METHOD:
For The Mousse:
1). Bring the milk and honey to the boil, then pour over the cream
2). Whisk together until all the chocolate is melted and the mix is a smooth consistency
3). Making sure the mix is not hot, whisk in the whipped cream
4). Pour or spoon into cups and allow to set in the fridge overnight
For The Salad:
1). Toss all the ingredients together in a bowl and spoon on top of the chocolate mousse cup
2). Decorate with another spring of mint
