Classic Irish Stew

INGREDIENTS:
2tbsp Wicklow rapeseed oil
1kg rib steak / stewing beef in chunks
1 onion, roughly chopped
2 cloves of garlic, chopped
30g plain flour
2x 500ml Guinness
500ml beef stock
2tbsp dark brown sugar
1tspn dijon mustard
2tbsp Worcestershire sauce
2 carrots peeled and chopped
2 celery stalks chopped
1 bay leaf
400g chopped tomatoes
1 sprig of thyme herb
Salt
White Pepper
METHOD:
1. Tip the flour on to a plate and season generously with salt and pepper
2, Dredge the beef pieces in the flour and shake off excess flour
3. Heat oil in pot on medium to high heat
4. Brown off the meat in 2 batches to lock in the flavour
5. Do not over crowd the pot
6. Remove the beef once browned and set aside in a bowl
7. Add another drop of oil to pan if needed and add in the Carrot,Celery ,Onion
8. Fry for 5 mins then return the beef pieces to the pot
9. Pour in the Beef Stock ,Chopped Tomatoes and Guinness
10. Add in Bay leaf , Dijon Mustard , Brown Sugar , Worcestershire Sauce ,Salt ,Pepper and Thyme Herb
11. Simmer for 2 hours approx or until the liquid has reduced and thickened and the Beef is fork tender
12. Correct seasoning before ready to serve
13. Serve with freshly baked Soda bread and Irish Butter
