Fiona Uyema's Japanese Mince Beef & Noodles
INGREDIENTS:
Preferred oil, for frying
1 tbsp chopped ginger
1tbsp chopped garlic
400g beef mince
1 x pak choi, cut into 4 strips
1 tbsp sake (optional)
For the sauce:
4 tbsp Japanese soy sauce
2 tbsp honey
1 tsp chilli (optional)
Serve with
Wok ready noodles (4 x portions)
1 x carrot (peeled and grated)
Optional Garnish:
Hot sauce
Sesame seeds
METHOD:
1. Whisk all the ingredients for the sauce in a small bowl and set aside.
2. Check if your noodles are wok ready. If not, follow the cooking instructions on the pack so they are ready for the wok and set aside.
3. Heat oil in a wok over a high heat. Add the garlic, ginger and beef mince. Fry for a few minutes then add the sake if using. Next, pour in the sauce and mix well together. Allow to fry for a few minutes for flavours to develop and absorb into the meat.
4. Toss in the wok ready noodles and mix well together. Reduce the heat to low to keep warm while working on the next step.
5. In a separate griddle pan or frying pan, heat oil on a high heat and add the strips of pak choi. When the pak choi is nicely seared or crisp add a spoon of water to help to cook faster. Leave for a minute or so and cook to your liking.
6. Divide the noodles & beef mince between 4 bowls. Serve with pak choi and grated carrot on top. Garnish with hot sauce and sesame seeds.
