INGREDIENTS:
24 Crab claws
1 Lemon
1 Lime
1 Half fresh mango
1 Red Chilli
1 Half Red Onion
6 Cherry Tomatoes
2 Cloves of garlic
Small bunch of coriander
1 Tablespoon butter
Hot sauce of your choice (2 Teaspoons)
Paprika
Sea Salt
METHOD:
For The Crab Claws:
1). Ask your fishmonger for some pre cooked Irish crab claws, you can also buy these frozen
from some super markets, or if you have time, buy the whole claws and deshell them, but the
pre cooked ones are excellent. In a heavy skillet or wok, place a table spoon of butter on a
medium heat, add your chopped garlic, and allow it to melt.
2). Once the butter has melted, add in your hot sauce, and stir well to allow it to combine. You
can add as much or as little hot sauce as you like, but only a small amount is necessary as you
just want to lightly coat the claws. When the butter and hot sauce have combined, add your crab
claws, a quarter teaspoon of paprika, and allow to cook gently for 3-5 minutes.
3). When the claws have heated through, add a squeeze of lemon, and half a bunch of your
coriander, toss well. The claws are now ready to serve.
For The Mango Salsa:
1). Dice your red onion as finely as you can, deseed the chilli and dice into similar sized pieces
as the onion. Chop your cherry tomatoes into small pieces also, then peel your half mango, and
cut the yellow flesh into small cubes.
2). Chop your remaining coriander finely, and then combine all of the above in a small bowl.
Drizzle a half a teaspoon of olive oil, a pinch of salt, add a squeeze of lime, and stir.
To Serve:
1). Serve each portion of claws in a wide bowl, with a good spoonful of salsa on the side, or in a
ramekin.
