Lizzy Lyons' Marinated Spicy Chicken with Mango and Lime Salad
Base Ingredients:
8 chicken thighs
Marinade Ingredients:
1 tablespoon chopped flat leaf parsley
1/2 teaspoon cayenne pepper
1 tablespoon dried mixed herbs
2 chopped garlic cloves
4 tablespoons tomato ketchup
2 tablespoons sweet chilli sauce
100mls olive oil
Salt & pepper to season
Mango & Lime Salad Ingredients:
3 mangoes, ripe, peeled and thinly sliced
1 red bell pepper, thinly sliced
1/4 red onion, thinly sliced
1/4 cup fresh basil, thinly sliced
1/4 cup fresh coriander roughly chopped
Dressing Ingredients:
Zest of 1 lime
Juice of 1/4 lime
1 teaspoon white sugar
2 tablespoons of olive oil
Salt and pepper to taste
METHOD:
• In a large bowl mix all the marinade ingredients together.
• Place the chicken thighs in a zip lock bag and pour in the marinade ingredients ensuring that the thighs are completely covered in the marinade. Close the bag and place in the fridge for 2 hours.
• Remove the thighs from the fridge. Preheat the oven to 170C.
• Place a pan on a high heat and sear the chicken thighs skin side down until browned and a little charred. Turn over and repeat the process. Do not overcrowd the pan and sear off in batches if you need to.
• Remove from pan and place in ovenproof dish and put in the oven for 15/18 mins until cooked through.
• To make your salad place all the ingredients into a bowl and mix through
• For the dressing whisk all ingredients together.
• Serve your cooked chicken thighs on top of your mango and lime salad.
