8 Chicken thighs
(You can use breast also however the thigh meat is great at mopping up marinades )
For the Marinade
Mix it all together in a bowl with the chicken and marinate over night ideally, but anything over 2 hours will do!
On a baking try , cook the chicken at 180c for 35-40 mins until cooked throughout.
For the glaze
Add oil to a pan and heat over a medium to high heat
Cook the ginger for 2-3 mins stirring
Add the Rum, soy sauce, honey and citrus zest
stirring until reduced
Pour the glaze over the chicken before serving
This recipe works great over white rice
