Ingredients:
350g (12oz) plain chocolate
75g (3oz) unsalted butter
2 tablespoons clear honey
1 large beaten egg
200g dried fruit such as glacé cherries and raisins
120g toasted nuts, hazelnuts and almonds
110g ginger biscuits smashed
50g desiccated coconut
Method:
1. Line a small roasting tin or 20 cm (8 inch) cake tin with baking parchment or cling film
2. Break chocolate in to chunks place in heatproof bowl and melt over a pan of simmering water
3. Dont let the bowl touch the water, let the stream melt the chocolate
4. When melted, mix in the butter and honey until combined, then mix in the egg and stir again till combined then remove from the heat
5. Add dried fruit and nuts at this stage
6. Add biscuits to mix and fold thoroughly
7. Spoon into prepared tin and level out with spatula and leave to cool
8. When cold cover with cling film and chill until set normally 3-4 hours
9. Cut into slices enjoy
