Chicken with Butterbeans, Rosemary and lemon

Ingredients:

  • 1 whole Chicken, Cut into 8 pieces ( the kfc cutting method on Youtube is best) 
  • 350ml Chicken Stock 
  • 1  400ml can butter beans ,Drained 
  • 150ml Dry White Wine or Vermouth 
  • 1 Sprig Rosmary picked and chopped 
  • The juice of 1 lemon 
  • Chopped Parsley 
  • Mash Potato to serve 

Method:

  1. Heat a deep pan and add 2 spoons of oil. 
  1. Brown the chicken on all sides , then remove and put on a plate. 
  1. Add the wine and reduce by half.  
  1. Add the chicken , beans and stock. 
  1. Bring to the boil, cover with a lid and place in preheated oven 180c for 25 minutes. Alternatively cook on top of the range on a medium heat. 
  1. Take the pan from the oven and add the lemon juice, rosemary and some salt and cracked black pepper to taste. 
  1. Serve with some mash potato and plenty of chopped Parsley.
