Smoked Salmon Cream Cheese with Fondant Potato

INGREDIENTS
2 xl Potatoes
1lb butter
100g Cream Cheese
28g Smoked salmon off cuts
1 tbspn lemon juice
1 tbspn capers
2 radishes sliced
METHOD
1. Peel and shape the Potatoes in barrel shape with 2 flat surfaces
2. Heat the butter in a small pot, when its melted add the potatoes and cook over a medium heat, taking care not to colour too much.
3. Mix the Salmon with the cream Cheese and lemon juice
4. Remove the Potatoes from the Butter and drain any excess.
5. Place a potato on each plate and spoon some of the Cheese mix on each Potato.
6. Garnish with the Capers and Radishes.
