Roast Tomato, Garlic and Feta Pasta
Takes 30 minutes
Makes 4 portions
Ingredients:
- 700-900g cherry tomatoes
- 1 bulb garlic
- 1 block of feta cheese (around 200g)
- 4 tablespoons extra virgin olive oil
- Seasalt
- Black pepper
- 200/300g uncooked pasta of choice
- Small bunch basil, chopped
- Optional - chorizo, chilli, prawns
- Garlic bread to serve
Method:
- Begin by preheating your oven to 200C
- In a large oven dish, pour in the tomatoes.
- Now separate out the garlic cloves. Leaving the skin on and pop into the dish.
- Place the block of feta on the base of the dish in the middle.
- Drizzle the extra virgin olive oil all over the tomatoes, garlic & feta..
- Liberally crack black pepper and sprinkle with seasalt.
- Place in the top shelf of the oven for 15-20 minutes.
- The tomatoes will get very juicy an dbubbling and you will see some browning on the feta cheese.
- While that is roasting, cook you pasta according to the packets instructions, all very but remember to have lot of boiling, salted water!
- Once the pasta is nearly cooked, remove an entire mug of pasta water, about 150ml.
- Drain the pasta.
- Take your oven dish out of the oven, take the garlic out of their case with a fork and squeeze them into the tomato juices.
- I remove a few tomatoes to keep as garnish.
- Add in the basil, keeping a little for garnish also.
- Toss the pasta in with the tomatoes and add the pasta water.
- Keep stirring until it is all well combined.
- Serve hot with more basil and tomatoes to garnish and enjoy!
