White Chicken Chilli

Maria Harte's White Chicken Chilli

Ingredients:
1 rotisserie chicken, meat shredded
1 white onion, diced
3 garlic cloves, crushed
1 green pepper, diced
340g tinned sweetcorn
1 tbsp green Jalapeños, chopped
1 tin white beans
2 tsp ground cumin
1 tsp ground coriander
1 tsp mild chilli powder
1 chicken stock cube
100g cream cheese
Fresh coriander
Lime

Method:
1. Add a tablespoon of oil to a big pot and place on medium heat. Add the onions, pepper, and garlic and allow to soften for 5 minutes.
2. Meanwhile, blitz up half a tin of drained beans with a little water and a stock cube.
3. Add the spices to the veg and let them cook out for 3 minutes.
4. Add the blended beans, along with about 700ml water, and let it reduce down for 10 minutes.
5. Check for seasoning, add the cream cheese, sweetcorn, and whole beans. You can freeze the soup at this point.
6. Add the chicken and let it heat through. Finish with fresh lime juice and coriander.
7. Serve on its own or with chopped scallions, avocado, and extra coriander.

Tip: You can fry off 4 diced chicken fillets before adding the veg if you don't want to use a cooked chicken.
