Ingrediants
6 Tacos 10cm, blue or white Tortillas
1L Oil for frying, Sunflower is fine
100g Vegan Pulled pork
Diced Red onion , Fine
Coriander
Soy sauce, A splash
1 Ripe Avocado diced
Diced Tomatoes
50 ml ev Olive Oil
100ml Coconut Yogurt
28g Diced Cucumber
A sprig Of chopped Mint
1 clove of chopped garlic
Instructions
1. For the Tzatziki, Mix the Yogurt with The ingredients underneath. Set aside In a bowl.
2. Mix The avocado ,Tomatoes & Olive oil to make a Salsa, Season to taste.
3. Heat the sunflower oil to a medium Heat and fry the Tacos until Crispy, About one Minute, Dry on a paper lined sheet.
4. Heat a non stick Pan to hot and Fry the pulled Pork to golden brown, It cooks like normal Meat.
5. Deglaze the pan with the Soy.
6. To serve Place some Vegan Pork on each Taco , Add Somme Tzatziki and the Salsa.
7. Add hot sauce to your liking, I favour Talulah
