For the bread:
250g strong flour Pinch of sea salt 7g (1 sachet) dried yeast 75ml warm water 75ml warm milk 1 tbsp Irish rapeseed oil Method: Place all the dry ingredients into a bowl and mix, slowly add the milk and water and mix by hand then add the oil and continue to mix until a smooth dough is formed. Cover the bowl with a cloth and leave to prove for at least 2 hours, then knock back and leave to prove again for another hour. Roll out the dough into a round shape like a pizza base and cook on your bbq or griddle pan. (takes about 2 minutes each side) Toppings: Here I’m using goats cheese, grilled courgettes, onion jam and rocket. Blend the goats cheese with some cream until soft. Coat the sliced courgettes with rapeseed oil and salt, then grill on the bbq. When cooked put in a bowl and squeeze fresh lemon over them. Now to build your flat bread, spread your goats cheese on the base of the bread, then a layer of onion jam. Put the courgettes on top and then some rocket leaves. Enjoy
