Place sultanas, Mixed Peel and Tea in bowl and leave to soak overnight
Add Sugar, Egg, Zest, Vanilla and Mixed Spice and mix well.
Gently mix in the Self Raising Flour.
Transfer to a greased & Lined 900g/2lb loaf tin.
Bake in a pre-heated oven 175°C for, one 60 / 65mins or until risen and firm to the touch.
To serve: Gently fry slices of the brack in butter, until crisp on each side. Mix the mascarpone with some whiskey, mixed spice & honey, all to taste. Serve the mascarpone on top of the fried brack.
