Green rice
Method
Green rice- In a smoking hot wok, add the egg and quickly stir fry, add the rest of the ingredients except the rice and coriander and stir fry for 2 minutes, add the cooked rice and cook for a further 3 minutes. Finish with the chopped coriander.
Prawns- Peel and de-vien, place in a bowl with the ginger, turmeric, garlic, coriander and chilli. Place a pan on a high heat and when hot add the olive oil. Saute the prawns for 2-3 minutes, add the finely chopped carrot, finish with the lemon juice and a little more olive oil.
