Spicy Indian Dumpling Soup

Ingredients:

For the Soup Base:

· 2 tbsp ghee or vegetable oil

· 1 tsp cumin seeds

· 1 bay leaf

· 1 onion, finely chopped

· 4 garlic cloves, minced

· 1-inch piece of ginger, grated

· 1 green chili, chopped (optional for heat)

· 2 medium tomatoes, pureed or chopped

· 1 tsp turmeric powder

· 1 tsp coriander powder

· 1 tsp red chili powder

· 1 tsp garam masala

· 4 cups vegetable stock or chicken stock

· 1 can (14 oz) coconut milk

· 1 cup green beans, chopped

· 1 red bell pepper, thinly sliced

· 1 cup cooked dumplings (store-bought or homemade)

· 2 tbsp soy sauce or tamari (for a gluten-free option)

· 1 tbsp fresh lime juice

· Fresh cilantro leaves for garnish

· Salt and pepper to taste

 

Method:

Step 1: Prepare the Soup Base

1. Heat oil or ghee in a large pot over medium heat. Add cumin seeds and bay leaf, allowing them to splutter and release their aroma.

2. Add onions, garlic, and ginger, sautéing until the onions turn golden brown and fragrant (about 5 minutes).

3. Stir in green chili (optional), followed by the pureed tomatoes. Cook for 4-5 minutes, until the tomatoes soften, and the oil begins to separate from the mixture.

4. Add turmeric powder, coriander powder, red chili powder, and garam masala. Stir well to coat the mixture with the spices, cooking for another 2-3 minutes until fragrant.

 

Step 2: Add Broth and Vegetables

1. Pour in the vegetable stock (or chicken stock) and coconut milk, stirring to combine. Bring the soup to a gentle simmer over low heat.

2. Add green beans and red bell pepper, cooking for 5-7 minutes until the vegetables are tender-crisp. Season with salt and pepper to taste.

3. Adjust the seasoning with lime juice, and if you prefer a bit more depth, you can also add a splash of soy sauce or tamari for an umami boost.

 

Step 3: Add Dumplings and Finish the Soup

1. Gently add the cooked dumplings to the soup, allowing them to heat through for about 3-4 minutes. If using frozen dumplings, ensure they are heated completely.

2. Stir in a touch of soy sauce or tamari, adjusting the salt level to your preference.

 

Step 4: Garnish and Serve

1. Ladle the soup into bowls, making sure each bowl has a generous amount of broth, vegetables, and dumplings.

2. Garnish with fresh cilantro leaves and a squeeze of lime juice for brightness and a fresh, zesty finish.

 

Optional Toppings:

· Sliced chili peppers for an extra kick

· Toasted sesame seeds or chopped peanuts for a crunchy texture

· A drizzle of yogurt or a dollop of sour cream for added richness
