Chef Martin O'Donnell from the The Twelve Hotel in Barna, County Galway was in the kitchen with this rice recipe.
Makes 6 portions
Ingredients
500 g basmati rice
Finely diced shallots and garlic
Knob butter
50 g Shredded coconut toasted
100 g sultana
Tsp turmeric powder..tsp fennel seeds..1 star anise
Method :
Sweat off the shallots and garlic in a pot and then add the spices and the rice
Stir well and just cover the rice about a inch above the rice with water
Cook for approx 10 minutes until all the water is absorbed and add in the toasted coconut and sultana s
Mix well
Sheeps yoghurt cucumber riata
1 cucumber de seeded and finely sliced
Tbsp chopped fresh mint
Squeeze of lemon juice
Pinch salt
200 g sheep yoghurt
Place all in a bowl and mix well ..leave for 5 mins to infuse and then enjoy
