Goat's Cheese Stuffed Mushrooms

(Serves 2)

Ingredients:
4 Flat Cap Mushrooms or Portabello Mushrooms
75g Fresh Goat's Cheese
2 Handfuls of Breadcrumbs
Flat leaf parsley, chopped
Some Lemon Zest
Salt & Pepper

Method:
1.  Preheat the oven to 200˚C, Fan 180˚C, gas mark 4
2.  In a bowl, mix the goat's cheese with most of the breadcrumbs, lemon zest and parsley with a generous twist of black pepper.
3.  Lay the mushrooms on an ovenproof dish with the stalk removed.
4.  Place the goat's cheese mixture on top of each mushroom, using the hole left behind from the stalk.
5.  Put the remaining breadcrumbs over and bake for 5-10 mins or until golden.
