Chilli Con Carne Burrito

 

For the chilli con carne:

Ingredients

250g minced beef

1 onion chopped

1 clove of garlic, chopped

1 chilli, chopped…how hot is up to you!

Salt & Pepper

Olive oil

A tsp of tomato puree

A tsp of dried oregano

A tin of tomatoes

A few drops of Worcestershire sauce

For the rest:

100g long grain rice, cooked according to instructions

4 tortilla wraps

Grated cheese

Method

  1. To make the chilli sauce, heat the oil and add the onion with a pinch of salt
  2. Sweat the onion until its softened – then add the garlic and chilli
  3. Add the mince and stir until the outside of the mince has browned
  4. Then add tomato puree and then stir in for a moment
  5. Next, add the tin of tomatoes, and using the empty tin add half a tin of water
  6. Then sprinkle in the oregano and Worcestershire sauce
  7. Simmer gently for at least 30 minutes

Place the rice & some of the chilli into the middle of the wraps & top with the cheese. Roll one side over, tuck in the edges & roll fully.
