Chef Tara Walker is the author of “Good Food, No Stress" and she was in studio with two delicious recipes taken from the book. Here's her take on goat's cheese tartlets.
Goats Cheese Tartlets
(Makes about 12)
ingredients:
1 sheet of shop bought, ready rolled puff pastry
Handful of cherry tomatoes, sliced in half
½ a Red Onion, thinly sliced
3 tablespoons of Pesto (homemade is best)
1 Log of Goats Cheese
For the Basil Pesto:
Large Handful of fresh Basil
3-4 tablespoons of Pinenuts, toasted
Parmesan Cheese, grated
Good quality Extra virgin olive oil
2 Cloves of Garlic
Salt & Black Pepper
method:
1. Preheat oven to 180*C and Grease a fairycake tin
2. Cut the puff pastry into circles and place in individual bun moulds in tin
3. Place tomatoes, onions and goats cheese into the pastry
4. Bake for approx 20-25 mins
5. For the pesto, place the basil in a food processor and pulse briefly
6. Add garlic, olive oil, pinenuts and pulse again. Remove to a bowl and fold in the grated parmesan
7. Remove the tartlet from the oven and drizzle with pesto and serve.
