Vegetarian Korma Chickpea Burger

Vegetarian Korma Chickpea Burger 

Ingredients:
1 Onion, chopped finely
1 Garlic clove, chopped
2 Courgettes, finely diced
8oz Carrots, grated
400g Chickpeas, cooked (shop bought can )
3oz  Breadcrumbs
2 Teaspoons of Korma Sauce or Curry Sauce (optional)
2 Tablespoons of Crunchy Peanut Butter
1 Egg Yolk
60g Chopped Parsley
salt and pepper to taste


For the Tomato Relish:

Ingredients:
1 Red Onion, finely chopped
6  Tomatoes, chopped
70g Dark Brown Sugar
4oz Red Wine Vinegar
1 Tablespoon of Rapeseed oil


Method:
1.  For the tomato relish, fry red onions until soft in garlic oil.  Add tomatoes and gently fry for 5 mins
2.  Add in sugar and vinegar and simmer for 15-20 mins till reduced down to chutney consistency
3.  Remove from heat and leave to cool, once cooled store in airtight jar and place in fridge ready to serve
4.  For the burger, fry onion till soft, then add courgettes and carrots until soft and leave to cool
5.  Drain Chickpeas and blend until smooth in a food blender and put into bowl with onions, carrots and courgettes
6.  Place rest of ingredients into bowl and season with salt and pepper
7.  Shape into preferred size burgers and chill for 1/2 hour before using as this helps firm up your burger
8.  Preheat oven to 180c/fan 160c/gas 4
9.  Gently fry each burger until golden brown on each side and place in preheated oven for 20-25mins till cooked right through
10.  Serve with crisp leaf salad and the homemade tomato relish
