Ingredients:
1). Selection of nuts
2)1 sweet potato diced and roasted
3). Olive oil
4). 125g salad leaves (steep in water and lemon juice and dry to keep the leaves crispy)
5). 125g feta cheese cubes
6). 10 cherry tomatoes halved
7). 1 red onion finely diced
Instructions:
1). Preheat your oven to 180C.
2). Preheat a frying pan on a medium heat, add the nuts and dry fry till toasted. Remove and set aside.
3). Peel and dice the sweet potato drizzle with a little olive oil and season with salt and pepper. Place on a baking tray and put into the oven for 15 minutes until cooked through.
4). Wash the salad leaves in lemon and water, set aside and spin dry. You can place in a container with a sheet of kitchen roll for use later in the week, or if using on the day place in a bowl.
5). Add the sweet potato and the rest of the ingredients on top of the salad.
6). If using for later in the week, place in a container and refrigerate.
