Ingredients:
1). 4 breasts of raw chicken
2). 1 tbsp olive oil
3). 1 tsp mixed herbs
4). 1 tsp paprika
5). Salt & pepper for seasoning
6). 4 chopped tomatoes
7). 1/2 cucumber diced
8). 1/2 onion diced
9). 100g Greek yogurt
10). Juice of half lemon
11). 1 tbsp of wholegrain mustard
12). 1 garlic clove crushed
13). 4 slices of grilled bacon, sliced
Instructions:
1). Preheat your oven to 180C.
2). Drizzle a little olive oil on the chicken and season with salt, pepper, herbs and paprika.
Place the chicken on an oven-proof dish and put into the oven for approximately 25 minutes/until cooked through.
3). Remove and set aside. When chicken is cooled, cut into small chunks and put into a bowl.
4). Add all the other ingredients. Put into a container and refrigerate for use during the week or add to the salad base if using on the day.
5). This chicken salad mix can be used as a sandwich/wrap filler for use throughout the week.
