Ingredients
For the pie crust:
· One sheet of ready-made puff pastry
For the Apple Filling:
· 60g unsalted plant-based butter
· 1.8kg apples, preferably a mixture of Golden Delicious and Granny Smith (about 8 to 10 apples), peeled, quartered, cored, and sliced 10mm/1/2 inch thick
· 115ml maple syrup
· 75 ml cider
· 60ml melted ice cream
· 2 tablespoons corn flour
· 1/4 tsp salt
· 1 teaspoon ground cinnamon
· 70g raisins optional
For the streusel crumb Topping:
· 130g plain flour
· 110g light brown sugar
· 1 teaspoon ground cinnamon
· ¼ tsp salt
· 85g unsalted plant-based butter, melted and cooled slightly
· 1 tsp vanilla extract
· 50g crushed pecans (optional)
Method
1. Pre heat your oven to 180c
2. Closely roll the puff pastry around the rolling pin and gently unroll it onto a 9-inch pie dish, letting excess pastry hang over the edge.
3. Ease dough into plate by gently lifting edge of dough with one hand while pressing into plate bottom with your other hand.
