Ingredients (serves 1):
125g firm tofu thinly sliced
Slab of foccacia bread or 2 slices of sourdough
1 tbsp vegan mayonnaise (see recipe below)
1/4 tsp red pepper pesto (see below)
Little gem lettuce
1 tomato sliced
Salt
sliced For the marinade:
3tbsp nut butter
2 tbsp soy sauce
1 1/2 cup sesame oil
3 tbsp sriracha
1/2 cup maple
3tsp dried oregano
3 tsp ground coriander
1 1/2 tbsp onion powder
3 tbsp garlic powder
3 tbsp smoked paprika
3tsp fresh ginger
4tbsp liquid smoke (add 1tbsp smoke paprika and 1 tbsp maple instead)
Vegan Mayo;
1 cup sunflower oil
1/2 cup soya milk
1 tsp garlic puree
1 tsp Dijon mustard
1/2 juice of lemon
Seasoning
Method
1. Mix all marinade ingredients in nutri bullet or ninja
2. Mix all mayo ingredients in nutri bullet or ninja
3. Brush thinly sliced tofu with marinade and place in oven for 20 mins each side at 200, continually brushing if needed
4. Get the foccacia bread ready with mayo on side one side and pesto on the other side
6. Salt the sliced tomatoes and place on the bread with gem lettuce with warm tofu, also delicious cold.
