Apple Crumble and Best ever Custard

INGREDIENTS
- 700g / 1 1/2 Ib Bramble Cooking Apples
- 50g / 2 oz Sugar
- 2 Tablespoons Water
- Pinch Cinnamon
Crumble
110g / 4 oz White Flour
50g / 2 oz Butter
50g / 2 oz Caster Sugar
Custard
600ml / 1 pint Full Fat Miljk
Vanilla pod
6 egg yolks
50g / 2 oz Sugar
Method
- Stew the apples with the sugar and Water in a saucepan until half cooked
- Next taste and add more sugar if needed
- Pour mixture into pie dish and sprinkle over cinnamon and leave to cool while you make the crumble topping
- Rub the butter into the flour until it resembles course breadcrumbs
- Add the sugar and then spoon over the apples in the pie dish until all apple mixture is covered
- Bake for 35-40 minutes in preheated oven or until the top is fully cooked and Golden brown in colour
- Remove from oven and leave to cool slightly
- To make the custard bring milk in a saucepan to the boil with vanilla pod
- Beat the egg yolks with sugar until thick and white
- Whisk in half the hot milk and then mix the mixture back into the hot milk in saucepan
- Cook over very low heat stirring consistently with a wooden spoon until the mixture thickens slightly
- Remove from the heat and strain , cool slightly and serve with crumble
