Banana Slab Cake
Ingredients
 
Cake
200g butter softened
150g caster sugar
50g brown sugar
3 eggs
200g Self raising flour sieved
1 tsp vanilla extract
1 heaped tsp baking powder sieved
3 very ripe bananas puréed (use a handheld soup blitzer)
 
Burnt butter Icing
Melted 100g butter brown
200g icing sugar sieved
1 tsp vanilla
Toasted chopped nuts optional (almonds/hazelnuts/walnuts)
 
Method
 
1.    Preheat your oven at 180C
2.    Cream the butter and sugars together
3.    Then add in the eggs and vanilla extract
4.    Add in the sieved self-raising flour and baking powder and fold in
5.    Then finally add in the pureed bananas
6.    Line a brownie tin with parchment paper and then pour in the cake batter
7.    Then bake in the middle shelf for about 25-30 min until a skewer comes out clean from the middle of the cake
8.    While take is baking make the icing – melt the butter in a saucepan, keep watching it as it will turn brown very very quickly and can burn. This takes a couple of minutes.
9.    Then add in the sieved icing sugar and vanilla and mix well together
10.   Sprinkle with some chopped nuts of your choice if you want.
 
Top Tip - If you are short on time divide up the batter into muffin or bun cases and it will take approx. 15 min to bake.
