Coffee Sandwich

Ingredients:

Cake: 

  • 175g/6oz Self Raising Flour 
  • 175g/6oz Butter or Margarine (at room temperature) 
  • 175g/6oz Caster Sugar 
  • 3 Eggs 
  • 2 tablespoons Instant Coffee  
  • Pinch of salt 

Icing/Filling: 

  • 200g/7oz Icing Sugar, sieved 
  • 125g/4oz Butter or Margarine (at room temperature) 
  • 1 tablespoon Instant Coffee  

 

Method:

  • Grease and base line 2 x 18cm/7" sandwich tins. Pre-heat oven to 180°C/350°F/Gas 4. 
  • Place all the ingredients for the cake - flour, margarine, sugar, eggs and coffee - into a mixing bowl and beat together until mixture is smooth. 
  • Transfer to the prepared tins and bake for about 25-30 minutes. The cake is baked when the top can be gently pressed and it springs back. 
  • Remove the cakes from the tins and cool on a wire tray. When completely cool, make the icing by beating all ingredients together until smooth.  
  • Sandwich the two cakes with the half the filling and spread the remaining icing on top of the cake. Enjoy!
